In Daimyo, Fukuoka City, Hakata Ryotei Chikae (博多料亭 稚加榮) is a Japanese restaurant founded in 1961 that, according to its official site, builds its cooking around fish from the Genkai Sea, kept alive in an ikesu (tank) inside the shop. A ryotei can sound formal, but on weekends the ground-floor tank counter serves a set lunch that is easy to walk into.

According to the official site, Chikae has cooked from a live tank of Genkai Sea fish since it opened in 1961. Its official Instagram profile says the tank holds seasonal fish landed from around Kyushu. There are seasonal fairs on natural ara (grouper), tiger pufferfish and Tsushima-caught tuna, and dinner centers on kaiseki, which needs a reservation. Chikae also sells its own mentaiko (spiced cod roe) with an online shop on the official site.

The address is 2-2-17 Daimyo, Chuo Ward, Fukuoka City. The official access page gives a 5-minute walk from Exit 4 of Akasaka Station on the subway Airport Line; by car, about 35 minutes from Fukuoka Airport or 15 minutes from Hakata Station. Parking is not mentioned on the official site. Daimyo is walkable from Tenjin, so a Tenjin-area hotel keeps the trip short.
